What made you started to think about Baking?
For as long as I can remember I have loved to bake. Raised in a family of restaurateurs who set up institutions like Blue Fox and Sky Room in Calcutta, I developed a love for food from an early age. I would stand in the kitchen and watch my mom, as she prepared delicious food with such ease. Another factor that played a significant role was the family holidays where we got to try different foods from around the world. It helped to have a family who is as much of a foodie as I am. I love to try desserts that play with unique flavors and textures and would come back from the holidays and try replicating those desserts. I completed my MBA in Marketing and worked for five years, but baking was always something I would look forward to at the end of the day. I never once regretted my decision of quitting my job to pursue a degree in Patisserie and Boulangerie from Le Cordon Bleu, London.
What's baking to you and how is it different from regular cooking ?
There’s nothing better than the aroma of freshly baked goods. I know I sound crazy saying this, but
it’s true. While both cooking and baking require skill, baking is an exact science where the right
quantities, ingredients and baking temperatures are paramount. Personally, for me, it is more challenging and the thrill of seeing your end product being appreciated by others is what makes the
If you have to explain who are you and what's baking to you in one line , what would it be ? It could be your tagline :)
I am a graduate from Le Cordon Bleu London and have prior work experience at The Oberoi, Gurgaon. Baking is an expression of my love for food. Chef Edward Lee says it best- “Dessert is like a feel-good song and the best ones make you dance” . Through my products I hope to resonate the same feeling with my customers.
What's your opinion about food scenes in Hyderabad for Home Bakers ? How much tough is to setup and establish?
As a Delhiite who's settled in Hyderabad, I was a little skeptical at first about the food scene in Hyderabad. However, now having lived here for about a year and after exploring the city I can confidently say that there are plenty of opportunities for home bakers. Of course one has to bear in mind that it is a price sensitive market, but I wouldn’t consider that a deterrent in any way. The important thing to understand is the taste profile and requirements of your consumer and build your menu accordingly.
What's the best feedback/comment you got from your customer that you cherish till date?
There is no better feeling than knowing that your customers have devoured your desserts and come back for more. One of my customers regularly orders desserts for every family occasion and the breakfast granola is one of her favorite items on the menu. She made her sister, who is based in the US, try the granola and she loved it so much that now she regularly orders from me and takes back big batches every time she is in India.
What do you want to resonate with your customers via your creations?
Just as in my family where every meal is a celebration and ends with dessert, where even the evening tea is an occasion in itself and is accompanied with tea cakes and other goodies, similarly I hope to offer products to my customers that can be enjoyed at any point of day. There is a wrong notion that desserts have to be sweet; via Scuti I hope to change that belief and instead offer my customers desserts that play with your taste buds and leave you wanting more. I also have wide range of products for the health conscious, such as granola bars, gluten free cakes and breads, as well as sugar free options.
Whats your signature products and recommendations?
Breakfast granola and Granola bars- for the health conscious
Sacher torte- Scuti’s own take on the delicious Austrian cake
Tea Loaves ( Two of my favorites are the Lemon Pistachio and Chocolate Orange)
Entremets (these are multi layered, multi textural desserts that usually have multiple flavors that come together in perfect harmony. It’s almost like tasting a different dessert with every bite). My favorites are Bora Bora and Hazelnut Crunch.
Tarts- My favorite is the Dark Chocolate Ganache Tart with a Praline Chocolate Crunch

What's next steps in your baking career and/or passion?
My plans are to tap into Hyderabad’s market and grow my brand. I plan to open a state of the art cafe that offers a unique experience to the customers.
What's to change for home bakers to be more influential in Hyderabad Food scenes?
There is definitely scope for more exposure for home bakers. One of the ways I can think of is via events where home bakers can showcase and sell their best products to customers. Also, I feel currently it isn't straightforward to procure raw materials. There should be a forum for vendors and home bakers to come together and discuss the obstacles and how to make the process easier. This would be beneficial in promoting the businesses of both the groups involved.
